• 4 links Cajun Texas Smokehouse sausage, sliced into half-moon pieces
  • 3/4 cup heirloom tomatoes, halved
  • 3/4 cup English cucumber, sliced into half-moon pieces
  • 3/4 cup red onions, sliced thinly
  • 3/4 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, roughly chopped
  • 1 1/2 cup Italian or French bread, cubed then toasted
  • 1 1/2 to 2 tablespoons of Cajun seasoning
  • 2 to 3 cups mixed green lettuce
  • 1/2 to 1/3 cup balsamic vinaigrette dressing


Sauté Cajun sausage until browned. Remove from pan.

In a large mixing bowl combine the tomatoes, cucumbers, onions, mozzarella, and basil.

Add the cooled cooked sausage and toasted bread along with the mixed greens.

Add Cajun seasoning and Balsamic dressing to taste.
