• 4 links Cajun Texas Smokehouse sausage, sliced into half-moon pieces
  • 1/2 yellow pepper, thinly julienned
  • 1/2 green pepper, thinly julienned
  • 1/2 red pepper, thinly julienned
  • 2 cups of cooked penne pasta
  • 1/2 medium onion, sliced into strips
  • 2 tablespoons of butter
  • 2 cups of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1 1/2 to 2 tablespoons of Cajun seasoning
  • Green onion for garnish


Sauté Cajun sausage until browned. Remove from pan.

In the same pan add the sliced vegetables and sauté with drippings from the sausage. Remove when tender.

Add the butter until fully melted then pour in the heavy cream bring to a simmer.

Add the parmesan cheese in small portions and mix until smooth.

Add Cajun seasoning and wisk.

Add sausage & vegetables.

Fold in the cooked pasta and adjust seasonings to taste.

Garnish with thin cut green onion.
